The glory of Thanksgiving lies in its Olympic-marathon-sized food events that can leave us all... well... stuffed and breathless. Maybe you're the home cook whose arms are about to fall off after whipping so many mashed potatoes. Maybe you're a Black Friday shopper who's starving but can't stomach being on your feet any longer. Maybe you're the relative they send ALL the leftovers home with. No matter who you are, this ratio-more-than-recipe will help you gobble up those holiday leftovers without feeling like it's Thanksgiving Part Two ... or Three... or Four...
Black Friday Stuffing Waffles
For every cup of stuffing or dressing you'll need:
2 T stock or milk
2 big pinches cheese
Toppings: pepper jelly maple syrup, gravy, cranberry relish (see below)
1. Combine all ingredients in a bowl. Allow to sit for 10 minutes or up to overnight.
2. Preheat a waffle iron or panini pan at medium high. Brush with high heat oil. Spread the mix out in an even layer (remember, it won't pour like pancake batter), cook until crisp. Keep warm on a baking sheet, loosely tinted with foil, in a warm oven.
Pepper Jelly Maple Syrup: combine equal parts pepper jelly and maple syrup. Add Tabasco to taste.
Cranberry Relish: finally chop or pulse in a food processor one small jalapeno (seeds removed to taste), 1/2 cup fresh cranberries, and 1/4 cup red onion. Season with salt, pepper, and a squeeze of lemon juice.
