Sometimes a recipe needs an introduction or an anecdote to grab your interest. Sometimes your spouse looks at you an hour before game time and asks what kind of snacks you're making. This is that kind of crunch time snack. Feel free to mix up the fillings as you’d like (see my suggestions below), but this recipe is written to help you run to the store, grab the goods, and get back to cheering on your favorite team.

Stuffed Pepperoni Pizza Rolls
16 dinner rolls
2 cups marinara
32 slices pepperoni
16 oz.. mozzarella, cut into slices or grated
½ cup melted butter or olive oil
1 tablespoon garlic powder
1 cup romano cheese, finely grated romano cheese
1 tablespoon red pepper flake
1 tablespoon dried oregano
Preheat the oven to 400°. Line a baking dish with enough parchment paper to hang over all four sides.
Use a small, sharp knife to cut a hole in the soft side of each roll. Use your hand to make a pocket inside the roll. Schmear a tablespoon of marinara inside each roll.
Stuff each roll with 2 slices of pepperoni and a generous pinch of cheese (don’t be stingy, y’all). As you fill each roll, stand it up in the pan so the filling stays in place as they bake.
Mix the melted butter/oil and garlic powder. Slowly pour over the stuffed rolls, making sure to let the butter/oil drip in between the rolls. Sprinkle the romano, red pepper flake, and oregano on top. Give the pan a small swirl to make sure the butter is evenly distributed on the bottom.
Bake, uncovered, for 20-25 minutes, or until the cheese is bubbly and the rolls have browned nicely. If rolls brown too quickly, loosely top them with a sheet of foil for the remainder of the baking time.
Serve hot or at room temperature with remaining marinara. Sprinkle with additional cheese, red pepper, or oregano if desired.
For BBQ Chicken Pizza Rolls, make the following substitutions:
use 1 ½ cups marinara, ½ cup BBQ sauce, and a couple of shakes of your favorite hot sauce
-use shredded chicken, sliced red onion, sliced jalapeno, and cilantro as the filling
For Veggie Pizza Rolls, make the following substitutions:
use sauteed mushrooms, fresh spinach, and sliced red onion
